Say that ten times fast!
This pizza gets its pie-cred from roasted red peppers, sweet pineapple, and a sprinkle of feta cheese.
Total time: 30 minutes | Makes 4 servings (2 slices per serving)
Ingredients:
2 tsp olive oil
1/2 cup organic pasta sauce
1 cup diced pineapple
Salt, to taste
Pepper, to taste
Basil (dried or freshly chopped), to taste
1 red bell pepper, stemmed, seeded, and diced
8 oz prepared whole wheat pizza dough
4 Tbsp shredded Parmesan cheese
2 Tbsp low-fat feta cheese crumbles
Instructions:
Preheat the oven to 450 degrees.
Preheat olive oil in a medium pan, over medium high heat. Place bell pepper and diced pineapple in the pan. Season to taste with salt, pepper, and basil. Saute until the edges of the pepper and pineapple begin to blacken, 4 to 5 minutes. Remove from heat, and reserve.
On a lightly floured surface, use your hands to stretch the pizza dough into a thin round. Place it in a nonstick pizza pan. Spread the dough with the pasta sauce. Sprinkle with half of the cheese. Arrange the bell pepper and pineapple on top. Sprinkle with the remaining cheese.
Bake until the edges are crisp and lightly browned, and the cheese is melted, about 10 to 12 minutes. Remove from oven, and sprinkle with basil, if desired. Let pizza stand about 2 to 3 minutes before slicing and eating.
